FREEZING UNCOOKED CORN
16 C. uncooked Corn, 3C. crushed ice, 2T. Salt, 1/2 C. sugar
Husk corn and clean off silk. Cut corn off the cob. Measure the above ingredients into a bowl and mix together. Put enough for a meal into a freezer zipper bag. Freeze ASAP
Remove from freezer and microwave until almost thawed. Rinse in cool water until only corn is left. Put in sauce pan, add water to cover, salt to taste, add butter or marg. Heat to boil. Serve. Tastes like fresh.
RED & GREEN PEPPER RELISH
Makes about 6 pints
6 lg. green peppers, 6 lb. red peppers, 6 lg. onions, 3 tsp. salt, 2 C. (scant) sugar, 2 C. vinegar, 1/3 C. water, 1(scant)T. each of celery and mustard seeds.
Use food processor to chop (med. to fine) vegetables together. Cover with boiling water; let stand 5 minutes. Drain well; add salt, sugar, vinegar and water. Boil 5 minutes. Seal in hot sterile jars.
GREEN TOMATO PICKLE RELISH
1 Peck green tomatoes (1/2 peach basket), 8 red & 8 green peppers, 4 lg. onions. Grind in food processor. Boil 15 minutes, drain well. Add 2 1/2 lbs. sugar ( 2 1/2 lbs. = 5 1/2 + 1/8 C.), 1 qt. vinegar (less if vinegar is strong), Put the following into a cheese cloth bag. 2 sticks cinnamon, 2 T. whole cloves, then put into
mixture. When it boils, remove the spice bag and add: 1 T. celery seed, 2T. mustard seed, 4 T salt.
Mix well. Bring to boil again, then put into jars and seal.
